The 2010 vintage of the Wahoo White is 100% unoaked Chardonnay, with a bright citrus nose and a clean, crisp palate. Fresh acidity balance with subtle lemon and apple notes that finish with a hint of green grass reminiscent of Sauvignon Blanc. A good deal of CO2 provides a surprising textural quality.

“The wine is produced from our 50 acres of Bobal vines averaging 80 years of age and more. It expresses aromas and flavors of mountain herbs, minerals, and red fruit and has a lengthy, refreshing finish. The wine is an ideal partner to grilled meat and poultry. The wine's name, 11 Pinos, refers to the name of one of our vineyards and to the typical landscape of our wine region where a small forest of pine trees has grown up among the vineyards. A pure expression of the Bobal grape with its wild cherry and wild raspberry notes, along with herbs such as chervil and tarragon, this wine is free of the uber-ripe treatment that Bobal so often receives. The tannins are a bit dusty, but that too is Bobal’s proclivity, and if the wine lacks a bit of acidity, it makes up for it in tannin and spicy currant notes at the finish.
